The inimitable Cyrus Todiwala OBE DL will prepare a true feast for the senses, all created from the ethically sourced, sustainable and seasonal ingredients that are the hallmarks of his cooking.
Start with some Keralan-style tomato soup with tamarind extract & curry leaves, served with vermicelli tossed with cracked mustard seeds, white lentil, asafoetida & toasted cashew nuts.
Onto the pièce de résistance – the tandoori itself – with its array of meats and fish, including Cyrus’ unique duck breast marinated in extract of ginger & garlic with tamarind & crushed pepper; filet of Wester Ross salmon in Grandma Todiwala’s green chutney; skewered and chargrilled minced lamb with fresh mint, coriander, spices, cashew nuts & dates and, of course, the legend that is chicken tikka, but as you’ve never tasted it before.
